Tonight I decided to try something different, using as many Quebec ingredients as possible (I am more or less snowed in at the moment, but was pleased with the results of what I was able to make!).
I found a recipe online for tofu patties and played with it, changing methods and ingredients until I was happy with the final product. It took quite a while, but the patties were worth it! 1 cup of COLD cooked brown rice (leftover from the night before)
1 block of firm tofu (Unisoya, product of Quebec)
2 carrots (product of Quebec)
1 zucchini
1 large onion (product of Quebec)
3 cloves of garlic (product of Quebec)
Spices to taste (like cumin, tumeric, pepper, etc.)
1/4 cup nutritional yeast
1/2 leftover pasta sauce (optional)
1 free-range egg
Chop onion and garlic finely. Shred carrots and zucchini. Fry in a pan.
Crumble tofu with hands or a fork. Add to the pan.
When cooked, throw the veggies and tofu in a blender, add a few tablespoons of water and blend until smooth.
Add blend to a bowl with the brown rice and mix together with spices, nutritional yeast, and pasta sauce if using. Add an egg and stir well.
Heat oven to 350°F. Spoon mixture onto a baking sheet lined with parchment paper and bake until firm (flipping once).
Serve on bread with your favourite toppings.
