I had recently made turkey burgers with sweet potato “buns”. I had to slice the sweet potatoes, and had the ends left over, so I put them in a container and forgot about them. While making breakfast, I went into my vegetable drawer for some ingredients and saw the container. The ends had definitely seen better days: one peel had a bit of mold, the color was off, but the potato was still good. I peeled them, shredded them and made delicious sweet potato hash browns…mmmmmm
