I made a Kale, Tomato and Cucumber Superfood Salad for the superfood challenge! Using kale as the “base” ingredient, I modify this salad to whatever other fresh veggies are in my fridge or on sale at the grocery store that week. Also nice to sprinkler chia seeds and/or hemp hearts for additional fiber, omega, protein and iron.
