Eat comfortably and well

I had vegetables ready to be used before their due date, tomatoes, bell peppers, celery and some open canned tomato sauce and some tomato juice. I decided to make a big pot of chili. I had a couple of cans of kidney beans and tomato paste and some sun dried tomatoes so I fried up some onions and garlic and made a very tasty vegetarian chili. It was the perfect comfort food to celebrate the first day of spring that did not feel like it!
